Overview
Buckets are refilled from the wholesale market three mornings a week, so what goes into a bouquet is whatever is best that day rather than a fixed picture in a catalogue.

Before work begins
We work to a figure and a palette rather than a fixed stem list. If a flower you asked for is poor that week we call before we substitute it.

Occasional notes
What is good at the market this week, and the odd note about ordering ahead. A few emails a year, nothing else.
It is published in the open, where anyone can copy it, so it is left short of its final polish and audit pass. The design chosen is fully audited and polished before it goes live.
